Fancy Smoked Salmon Appetizer

Smoked Salmon and dill yogurt tops cucumbers. These fancy appetizers are garnished with capers and dill.

Ingredients
  

  • 1 large english cucumber
  • 1 cup greek yogurt
  • 1/4 cup chopped dill save some small sprigs for garnish
  • 4 oz smoked salmon
  • 1 tbsp freshly squeezed lemon juice
  • capers
  • salt and pepper to taste

Instructions
 

  • Slice cucumber into event 1/2 inch thick rounds. Set aside on a paper towel lined plate.
  • Combine yogurt, chopped dill, lemon juice, salt, and pepper in a small bowl. Set aside.
  • Cut salmon into rougly rectangular shapes equalling the same amount of pieces as you have cucumber slices.
  • Top each cucumber with a teaspon or large dollop of the yogurt mixture.
  • Either place salmon rectangles on top. Or, roll into more of a rose shape.
  • Add a caper and small dill sprig to the top of each cucumber apetizer.

Notes

If you are making this for a party and want to prepare as much as possible in advance you can slice the cucumbers and store in an airtight container.
Also, the day before you can make the yogurt mixture. I usually top them a few hours in advance and store them in the fridge until ready to serve.
These cucumber smoked salmon appetizers definitely should be served cold.
