It’s time for fall soup recipes!

I don’t know if you have the same struggle as me, but it is so hard to find a one pot dish that will satisfy my husband and be tolerated by my kids.
To be honest, I was nervous because I didn’t really have any back up option to give my kids for dinner. Much to my amazement, they loved this soup! My most picky child asked for seconds!
This is a creamy savory chowder type soup. It’s really delicious.
If you are wondering, what the heck is celeriac? I was too! It’s not the prettiest. In face while I was peeling it my little one asked what is was. I explained and said “it’s good!” to which my child replied “take a bite then!” Nice try kid.
I have to say I did not want to take a bite, it did not look appetizing. However, it did lend nice flavor and texture to this fall soup.
This is an easy recipe, the hardest part is all the chopping.
With a chowder like this, the texture is a really big factor. So, when chopping the veggies keep in mind what size would be best in a chowder. Next, I used an immersion blender VERY briefly at the end to mix in the cream and puree just a small amount of the veggies to give it a creamy and thicker base. If you don’t have an immersion blender (get one!) or if you don’t trust yourself not to overdo it then you can ladle out a few cups of the chowder to puree it then add it back into the pot.
My dishwasher is giving us problems, and I don’t like doing dishes. So I lazily just stuck the immersion blender in for a few seconds.
Update: Finally got a new dishwasher in between writing this a few weeks ago and actually getting it ready to post. LOVING how quiet our new dishwasher is, and that top tray for silverware is so great. I researched dishwashers for way to long, and am very happy with this Bosch dishwasher we went with. Celeriac, Fennel, Apple, and Potato Chowder
Ingredients
- 4 tbsp butter
- 1 yellow onion halved and sliced
- 1 fennel bulb halved, cored, and sliced
- 2 tsp salt
- 5 garlic cloves minced
- 4 tsp fresh thyme
- 3 tbsp all-purpose flour
- 5 cups vegetable broth
- 1 1/2 cups water
- 1 bulb celery root peeled and chopped
- 14 oz red potatoes chopped into 1/2 inch cubes
- 1 golden delicious apple peeled and grated
- 2 bay leaves
- 1/3 cup heavy cream
Instructions
- Melt butter in large soup pot.
- Add onion, fennel, and salt and cook for approximately 5 minutes until onions soften.
- Stir in garlic and thyme and continue to cook for another minute.
- Stir in flour and stir scraping any bits sticking to the bottom of the pot.
- Stir in broth, water, celeriac, potatoes, apple and bay leaf. Bring to boil.
- Reduce heat to low and cover, letting it simmer for about 30-40 minutes.
- Remove bay leaf and stir in cream.
- Using an immersion blender quicly puree some of the soup, making sure to mostly leave it chunky. Alternately, ladel out 3 cups into a blender, returning it to the pot when it's smooth.
- Season with salt and pepper to taste.
Recipe Substitutions
If you are vegan or don’t want to use cream, any plant based alternative would be fine. Same goes for the butter. You also could add some dry white wine to the recipe if you like. I didn’t have any on hand but it would go really well.
