Always searching for easy dinner recipes? Need a way to get your family to eat more eggs or protein?
This frittata is so tasty that my family’s only complaint was that I should have made a larger portion.
So, we had this delicious frittata again a few nights later and I made the recipe larger. The extra eggs plus a green salad was a perfect dinner for our family of four big eaters. Our favorite eggs are Vital Farms Pasture-Raised eggs.
The caramelized onions and goat cheese are my favorite part. I used green onions because that’s what I had but you certainly could use other herbs.
Dill would be great in this egg frittata. Scrambled eggs with dill and goat cheese are one of my favorite combos.
This frittata recipe is really so tasty and easy. It has immediately made its way into my regular dinner meal planning.
Serve this healthy egg dish for a brunch, luncheon, or easy family dinner. Salad, roasted potatoes, or hash browns would be a perfect side.
Healthy Frittata with Caramelized Onions, Goat Cheese and Tomatoes
Equipment
- Large Mixing Bowl
- 10-12 Inch Oven-Safe Skillet
- Whisk
Ingredients
- 1 Large Yellow Onion Halved then sliced
- 3 tbsp olive oil
- 12 Large Eggs
- 1/2 cup Heavy Cream
- 2 tsp Salt
- 1 tsp Black Pepper
- 1/2 Green Onion chopped
- 3/4 cup Crumbled Goat Cheese
- 1/2 cup Cherry Tomatoes halved
Instructions
Caramelized Onions
- Heat a 10-12 inch oven-safe round skillet over medium heat on the stove. Add olive oil.
- Add yellow onion slices to pan and stir every minute or two while onions cook.
- Cook until they have softened and are golden brown. Add a pinch of salt.
Frittata
- Preheat oven to 400°F while you cook the onions.
- In a large mixing bowl crack all eggs and mix well with a whisk.
- Add salt, pepper, and heavy cream and whisk again.
- Stir in green onion, caramalized onions, and goat cheese.
- Pour mixture into pan.
- Place tomato halves all over the egg mixture.
- Cook on medium low on stove for 3 minutes.
- Bake in the oven for 12-15 minutes until all of the eggs have cooked and frittata is fully set.
