Pumpkin Chocolate Chip Pancakes

- 1 1/2 cups milk
- 1 cup pumpkin puree
- 1 egg
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 cups all-purpose flour
- 4 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground allspice
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 3/4 cup chocolate chips (optional)
In a large mixing bowl whisk together milk, pumpkin puree, egg, olive oil, and apple cider vinegar.
In a smaller mixing bowl stir together flour, sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt.
Stir flour mixture into the pumpkin mixture until fully combined.
Stir in chocolate chips.
Heat a greased pan or griddle to low or medium heat. Cook approximately 1/2 cup portions of the batter until golden brown on each side.
