Pumpkin Chocolate Chip Pancakes

Ingredients
  

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 2 cups all-purpose flour
  • 4 tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground allspice
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 3/4 cup chocolate chips (optional)

Instructions
 

  • In a large mixing bowl whisk together milk, pumpkin puree, egg, olive oil, and apple cider vinegar.
  • In a smaller mixing bowl stir together flour, sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt.
  • Stir flour mixture into the pumpkin mixture until fully combined.
  • Stir in chocolate chips.
  • Heat a greased pan or griddle to low or medium heat. Cook approximately 1/2 cup portions of the batter until golden brown on each side.
