“A huge stack of pumpkin pancakes” is what my little one said in response to “what do you want for breakfast?” So, try as I might to pretend it’s still summer, fall has arrived.
Honestly, I don’t know where the request came from. I don’t frequently make pancakes, more often crepes.
I love fall, it’s my favorite time of year and always has been. The only part that has me in denial is knowing what follows.

For these pancakes I used all the fall spices. My kids loved them and had them for breakfast and lunch, so I’d say the serving size is enough for four people.

Pumpkin Chocolate Chip Pancakes
Ingredients
- 1 1/2 cups milk
- 1 cup pumpkin puree
- 1 egg
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 cups all-purpose flour
- 4 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground allspice
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 3/4 cup chocolate chips (optional)
Instructions
- In a large mixing bowl whisk together milk, pumpkin puree, egg, olive oil, and apple cider vinegar.
- In a smaller mixing bowl stir together flour, sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt.
- Stir flour mixture into the pumpkin mixture until fully combined.
- Stir in chocolate chips.
- Heat a greased pan or griddle to low or medium heat. Cook approximately 1/2 cup portions of the batter until golden brown on each side.
Pumpkin Pancake Recipe Substitutions
This is quite a flexible recipe. I used goat milk, but you could use non-dairy milk of your choosing or cow’s milk.
If going oil free you could use applesauce in place of oil.
If you don’t eat eggs, substiture with flax eggs.
I have not tried this pancake recipe gluten free, but a 1:1 all purpose gluten free flour should work fine. Check if it has baking powder already in it.
Our family stays away from vegetable oil, so I haven’t used cooking spray in ages. Recently I bought this ghee cooking spray, and it’s really useful.
