Best Summer Salad with Fennel, Sesame Brittle, Orange and Fennel
A delicious and impressive salad to serve guests. I love that all the toppings can be prepared ahead of time.
Ingredients
- 12 oz spring mix lettuce
- 1 fennel bulb halve, remove dense core and thinly slice
- 1 navel orange peel, thinly slice and separate segments
- 1 small red onion halve, peel, and chop
- 2 15.5 oz cans of chickpeas drained and rinsed
- 4 tbsp olive oil
- 3 tbsp capers
Dressing
- 1/2 juiced navel orange
- 1/3 cup olive oil
- 1/4 cup white rice vinegar
- 1 1/2 tbsp dijon mustard
- 2 tbsp honey
- salt and pepper to taste
Sesame Brittle
- 6 tbsp sugar
- 2 tbsp honey
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 tbsp water
- 1/2 cup sesame seeds I like a mix of black and white sesame seeds
- 1/2 tsp vanilla extract
- 1 tsp butter
- 1/8 tsp baking soda
Tuna
- 3 tbsp Trader Joe's everything bagel seasoning
- 2 5 oz cans albacore tuna
Instructions
- Preheat oven to 350°F. Toss chickpeas with olive oil, salt, and pepper on cookie sheet and roast for 30 minutes.
- Mix and chop up drained tuna with everything bagel seasoning with a fork.
- In a large salad bowl add the lettuce, fennel, orange segments, capers, red onion, chickpeas, tuna and sesame brittle.
Sesame Brittle
- In a small saucepan over medium low heat add sugar, honey, salt, water, and nutmeg and stir until all sugar and honey has melted.
- Add in sesame seeds and stir.
- Continue to cook and stir until mixture reaches 300°F or about 10 minutes if you do not have a meat or candy thermometer.
- Turn off the heat and add butter and vanilla extract.
- Stir in baking soda.
- Spread sesame seed mixture on a parchment paper lined cookie sheet. The mixture will not cover the full pan. Spread and smooth it with a rubber spatula. It should be about 1/4 inch to 1/2 inch thick. Leave it to cool.
- Once cool break or cut the brittle into bit sized pieces.
Salad Dressing
- In a small bowl whisk together all dressing ingredients. Keep the dressing separate until it's time to serve. Alternately, you can shake all the ingredients in a jar.
