Anyone else feel torn between soaking every last day of summer and the desire to put out autumn decorations and do some fall baking.
I was two seconds from lighting a fall candle and making pumpkin muffins. But, I decided there was a happy medium!
Peaches are perfectly ripe and in season right now. They pair so well with ginger and cinnamon in this sweet muffin. I’ve been all about peaches since I came up with this peach burrata salad.
My only regret is that I should have doubled the recipe, my kids are quickly devouring the dozen.
When I make muffins I do like to throw a few in the freezer. I pull them out for school lunches, or if we have visitors I can offer a wider variety of muffins, having frozen a few each time I bake.
Late Summer Spiced Peach Muffins
Equipment
- Mixer or whisk
- Muffin pan
- Rubber spatula or cupcake scoop
- Measuring cups and spoons
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup packed brown sugar
- 1 tsp ground nutmeg
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1 egg
- 1/2 cup olive oil
- 3/4 cup milk
- 2 peaches chopped
Instructions
- Preheat oven to 350°F
- Line muffin tin with paper or foil liners
- In a medium bowl combine flour, salt, sugar, nutmeg, cinnamon, and ginger.
- In a stand mixer with paddle attachment, or in a large bowl with a whisk combine egg, olive oil, and milk
- Slowly add in flour mixture
- Once all of the flour is incorporated fently fold in the peaches with a rubber spatula
- Scoop or pour batter into muffin pan. Optional is to sprinkle a bit of cane sugar on the top of each
- Bake for approximately 25 minutes until a toothpick inserted in the middle comes out clean
- Cool on a wire rack. Store room temperature in an airtight container
Peach Muffin Recipe Substitutions
You certainly could make these gluten free using an all purpose gluten free flour.
Don’t want to use milk? You can substitute with a non-dairy milk.
No eggs? Substitute with flax eggs (1 tbsp flaxseed meal mixed with 2.5 tbsp water. If you are using regular eggs these Vital Farms eggs are our favorite because they are pasture-raised and organic.
We don’t use vegetable oil, but you could use it if you wish in place of olive oil. If going oil free you could use unsweetened applesauce.
If you don’t have muffin liners you can grease your muffin tin. Or use my favorite silicone muffin pan I talked about in my chocolate cherry muffin recipe.

I will tell you about my other most used baking supplies. I very simply organized this drawer with boxes from Melissa and Doug wooden food toys. I’m not saying to buy these as drawer organizers, but if you already have the boxes they serve the purpose well!

Any measuring cups and spoons will do. My other favorite handy little baking tool was sent to me by the same friend who sent me the muffin pan. This cupcake scoop is not something I would have thought to buy myself, but it’s SO helpful!
